Tale of Two Pie Heavens: Part 2


Not wanting to make pie is nothing to be ashamed of. Not everyone has pie-making in their blood, or even a remote interest in breaking cold butter into a willing mound of flour, rolling out a flaky dough, wrestling it into a pie pan, crimping it, and filling it with deliciousness.

Fine. So be it. But there must be pie on the Thanksgiving table, so you are going to have to go out and forage in the urban wilds of Portland to find it. Fortunately many fine local bakeries are opening their pie-making arms to you. Here they are.

On any given day Random Order has extreme star pie presence, but their special order seasonal pie menu would tempt even the most ardent home baker into sneaking one or two onto the Thanksgiving Table. Choose from rum and spice-tinted Spirited Pumpkin, bourbon and caramel pecan-studded Kentucky Pecan, Brandied Pear with Dark Chocolate and Candied Ginger Streusel, Blackberry Apple with a cinnamon-sugar crust, Fresh Pear & Cranberry, and Vanilla Salted Caramel Apple. Even their plain old apple pie has a pedigree–the Old World Apple Farm apple pie is made with a blend of organic heritage apples from local Old World Apples. All pies are $28 if you order them in the tin, if you want a glass pie plate, they will run you $38, but the extra $10 is refundable when you return the pie plate.

Pickup: Scheduled pie pickup slots span Tue., Nov. 24-Thu., Nov. 26, so order promptly to claim the pickup spot that best suits you. NW Portland residents will be able to pick their pies up at the Little Green Grocer at 1101 NW Northrup.

This year Miss Zumstein, aka Anja Spence, has a full fall lineup of dazzling pies that include the aforementioned Golden Maple Custard Pumpkin pie with a pastry leaf pile on top (9″, $20), a pear streusel pie with candied ginger (9″, $20), her classic Pecan Pie made with Steen’s cane syrup (9″, $22), and a Spiced Apple & Cranberry Pie capped with a pretty lattice crust. She’s also offering a decadent triple-nut tart–hazelnuts, walnuts, and almonds in a buttery caramel with a bittersweet ganache glaze (10″, $35).

This Northeast Portland favorite isn’t just known for their jewel-like custom cakes, they can bake up a mean pie too. This Thanksgiving, choose from Bakery Bar’s anything-but-standard Pumpkin ($24), a brown butter-laced Maple Bourbon Pecan ($26), and the Fall Harvest ($28), a melange of brandy-spiked apples, cranberries, and figs that are baked into a vanilla bean-brown butter custard with almond praline. All pies are 9″ and serve from 6-8.

Since essentially anything that comes forth from the ovens at Ken’s Artisan Bakery is ambrosial, you can’t go wrong with their simple, elegant selection of Thanksgiving dessert favorites. Finish your monster meal with Ken’s Normandy Apple Tart with hazelnut cream and apple brandy (9″, $21.95), Poached Pear Tart (9″, $21.95), Pecan Tart in a buttery caramel base (9″, $21.95), Pear and Cranberry Tart with poached pears and cranberries in hazelnut cream (9″, $25), or the classic Pumpkin Tart (9″, $23.95) made with Viridian Farms pumpkins. And if you crave something light, bright and slightly unorthodox after downing your heap of turkey and mashed potatoes, order Ken’s Lemon Meringue Tart (9″, $23.95).

Wildwood’s talented Michelle Vernier has offered to bake your pies for you this year, which is very nice of her and very nice for you too, considering that she is one of the city’s best pastry chefs. I’ve got no frilly or fancy explanations for these pies, Wildwood lists the menu in five words: Choose from Pumpkin, Apple, or Pecan. All pies are $20, and like most things at Wildwood, they are made with fresh seasonal ingredients from local farms.

If you love Two Tarts’ pumpkin and pecan tassies, which are essentially Thumbelina-sized pumpkin and pecan pies, you’ll be quite excited that you can find regular-sized pies this holiday season at this popular Northwest Portland bakery. Choose from Sugar Pie Pumpkin with a sprinkled of candied ginger or Toasted Brown-Sugar Pecan ($20, including the glass pie plate they are baked in), and pie deceivers, if you care to impart the impression that you slaved for hours roasting pumpkins and sugaring pecans, for an extra five dollars you can upgrade to a lovely red pie plate costume that will fool anybody, with the possible exception of your mother, who knows you can’t bake pies worth beans.

Details may vary by location, but from what I can gather, you may order marionberry, apple, pumpkin and pecan pies from your neighborhood Grand Central Bakery, either freshly baked or solidly chilled and ready to pop in the oven. Pies are lovingly constructed from Shepherd’s Grain flour, Larsen’s Creamery butter and Willamette Valley fruit, and all ring in at $14.95. I was advised that a 2 to 3-day advance notice is advisable, and pies can be picked up during normal business hours on Wednesday, Nov. 25th.
