aperitif & crêpe pork pâté on levain toast

garlic soup over brandied pain perdu with mussels and crème fraîche (table side service on this one y’all!)

duck leg confit, Tarbais beans and Merguez sausage, duck fat potato galette with winter savory, and braised chicories with prune and olive

dressed greens, Ossau Iraty cheese, brandied fig
a “trou”!
