Premier Mt. Hood destination welcomes Gabriel Rucker for one-night collaborative dinner

WELCHES (Mt. Hood), Ore. – (June 12, 2012) – Altitude Executive Chef Paul Bosch is bringing the heart of the city up to the mountain with an exciting collaborative dinner with James Beard Award-winning Gabriel Rucker, executive chef and owner of Le Pigeon and Little Bird. The two chefs are combining their talent for an elaborate seven-course dinner on Sunday, August 12.

“This is a sensational event for Portlanders and those on the mountain alike to come and enjoy a great evening surrounded by exquisite food,” said Bosch. “Gabriel is incredible and we’ve collaborated on an exciting menu that is sure to embody the best of both city and country cuisine.”

Guests will experience dining at Altitude located at The Resort at The Mountain, a premier spa, golf and ski destination along the western slope of Mt. Hood, less than one hour from Portland. Bosch and Rucker have developed the following seven-course dinner for guests to enjoy:

First Course: Raw

truffle caviar-stuffed cherry bomb tomatoes, kampachi

crispy octopus, porcini puree, nectarine

oysters “Rockefeller”, white miso, foie gras, shiso

Second Course: Foie Gras

torchon, popovers, trufled berries, crème fraiche

Third Course: Sweetbreads

heirloom tomato goat ragout, angel hair pasta, fried sweetbreads, parmesan

Fourth Course: Fish

sous vide salmon, leek carbonara, bruleed egg yolk

Fifth Course: Meat

lamb saddle, Viridian farms succotash, lamb bacon

Sixth Course: Cheese

triple crème “brie-lee”, compressed apricots, accoutrements

Dessert Amuse

foie gras “fun dip”, freeze dried fruit

Seventh Course

chocolate, peaches, basil

The collaborative dinner with Bosch and Rucker is limited to 30 people and is $125 per person.  Wine pairings may be added for $30 per person.
