Morgan St. Theater Dessert Pop-Up at Xico

Pop-up dessert club Morgan St. Theater collaborates with pastry chef Mindy Keith, for a one night only dessert event.

PORTLAND, Ore. – July 2, 2014 – For one night in July, Morgan St. Theater is collaborating with pastry chef Mindy Keith to create a tasting menu devoted to creative ice cream desserts. Drawing inspiration from seasonal ingredients and whimsical imaginations – this menu brings summertime to the foreground, playing with the possibilities of frozen desserts. This 24-seat performance at Xico will include a flight of three frozen desserts served with storytelling and flair.

Morgan St. Theater is a pop-up dessert club specializing in ice cream and its infinite possibilities. Monthly menus are inspired by a creative theme and seasonal flavors and served up with stories. Jared Goodman, Morgan St. Theater’s creator, is a self-taught ice cream aficionado who makes all the desserts from scratch, sourcing from local farmers and artisans whenever possible. “I want to revolutionize the ice cream sundae,” he says. “Let’s make it smaller, less of a sugar bomb, and bring the focus to contrasting flavors and textures.”
July Menu:

Melon sorbet, phyllo of goat cheese and honey, chili salt and pistachio

“Hold the Pasta”
Brown butter and sage ice cream, roasted peach, ginger and elderflower compote, Moscato drizzle

“Corn 2 Ways”
Masa and sweet corn ice cream, chocolate, almond, sea salt, blackberry and raspberry shrubs

About Mindy Keith
Resident pastry chef at Xico and voted one of Portland Monthly’s five Top Chefs in 2013. Keith blends local and seasonal ingredients with exotic fruits and chiles to interpret traditional Mexican desserts. After receiving a Baking and Pastry degree from Oregon Culinary Institute, she baked at St. Honore, Dragonfly Coffee House and for friends and family until friend Liz Davis called Keith to run her pastry program at Xico in 2012.
