 A Gascon Dinner: Duck Confit!

Gascony, the rugged and verdant area bordered by the Garonne river in southwest France, is truly a food-lover’s paradise. With abundant year round farming, a daily market never more than an hour away, and plenty of unique beverages to wash it all down, Gascony is one of our favorite places for dinner inspiration. Here’s a rustic, yet refined dinner to consider:

For this meal, chef Ingrid looked toward one of her food bibles, the Zuni Café Cookbook. Judy Rogers has motivated many, many chefs and home cooks over the last 30 years. Her passing this week saddened many. Ingrid’s menu inspiration comes directly from Judy’s book.

The dinner focuses on the most ultimate of Gascon dishes–Confit de Canard–Duck roasted in its own fat. Winter is here, and when combined with the holidays, this supper makes for a wonderful reason to call some friends and make a reservation.

Here are the mechanics:

Saturday December 14th OR Wednesday December 18th

at Remedy Wine Bar

Hearty soup of winter vegetables, duck fat croutons

Duck Conft with sorrel and onion panade, grilled radicchio and warm dijon vinaigrette

Shortcake with autumn fruits

$35 per person
(beverage and gratuity not included)

How to reserve a table? Just reply to this email and say something like this: “Two for Gascony, 6pm on the 14th, please”. We’ll get right back to you with a confirmation. Reservation slots are available from 5-8pm each evening on the half hour. Or, you can call us at (503) 222-1449. Seating is limited.

Your job will be to peruse our wine list, choose a bottle or two to go along (let’s talk Hearty Reds!), and then let the magic happen. We hope you join us next Saturday or the following Wednesday for a delicious Gascon Supper.
