Aviary goes entirely vegetarian on Thursday, January 15 with a seven-course pre fixe dinner for $45
FOR IMMEDIATE RELEASE – On Thursday, January 15, Aviary will hold its first event dinner of the year, offering guests a seven-course menu of all-vegetarian items. The focus on vegetarian dishes will showcase the breadth of Aviary’s menu and their passion for creative vegetable preparation. Aviary’s nightly menu always includes a variety of inventive vegetable dishes, and this menu will showcase a selection of those as well as special dishes created for this evening. In July of 2014, Portland Monthly’s Food Critic Karen Brooks on Aviary’s Middle Eastern Beet Salad her “obsession” in an article called “What to Eat in Portland, Right Now.” Aptly timed to support healthy New Year’s resolutions, Aviary’s menu for the January 15th dinner will feature leek, tofu, romanesco, black garlic, ginkgo nuts, wood ear mushroom, quince, fennel, butternut squash and many other favorite ingredients of the season.

In a New York-meets-Pacific Northwest style, co-chefs Sarah Pliner, Jasper Shen, and Kat Whitehead focus on the creative use of quality, locally sourced ingredients with a fresh perspective. Pliner, considered one of the top chefs in Portland, is known for applying unexpected culinary techniques to traditional and exotic ingredients. With its sophisticated French-Asian fusion cuisine, Aviary has led the trend of high dining in the Alberta Arts District in Northeast Portland.
