Whole Hog Butchery Class at Olympic Provisions

Hello friends,

Our good man, Josh Graves, is freshly back from his exploits at cochon 555 in Seattle, where he competed in their new butchery competition. While we patiently await the results to be announced, he is ready to show off some of his moves. He will join our very own, Eli Cairo, ‘on stage’ for an afternoon of education and entertainment.

We will have a whole hog delivered from our friends at Square Peg Farm and you will see and learn the basic processes of breaking down and cutting, tying and processing a whole animal. Watch in amazement and go home happy with a bag full of fresh, local pork.

The class is March 6th at 2pm. It is $125 per person and is restricted to 18 students so do not tarry.
